Job Overview
Our client is searching a Production Manager. You will play a pivotal role in our USDA-inspected facility dedicated to manufacturing our Italian Dry Cured Meat line. We seek an experienced individual to oversee all aspects of production, seasoning, packing, and shipping. The ideal candidate will possess a minimum of 2 years of meat production experience.
Responsibilities:Supervise and lead the production team in meeting production standards and KPIs. Develop key personnel and ensure proper training in safe food handling and hygiene practices. Select meat cuts, mix spices, and assist in curing and salting meat for dry-cured products. Oversee stuffing, tying, and fermenting processes for salami production. Manage daily and weekly production schedules, assigning tasks to production assistants. Maintain communication and collaboration with USDA inspectors, ensuring compliance with regulations. Complete daily USDA paperwork and maintain accurate records. Ensure the cleanliness, maintenance, and sanitation of equipment and production areas.
Requirements:Experience supervising a team. Experience and passion for food/meat production and processing. Knowledge of safe food handling and USDA regulations is essential for maintaining our high standards of sanitation and adherence to HACCP principles. Availability outside of normal business hours as needed.
Preferred Qualifications:Experience in salami or sausage production is a plus. Bachelor's degree in engineering, business administration, food science, or related field. Professional certifications in production management or lean manufacturing. Experience with implementing process improvements and cost-saving initiatives. Knowledge of regulatory requirements and industry standards related to manufacturing processes.
